There are certain attributes to look for in a wedding caterer – things like sincerity, dedication, and punctuality, just to name a few. You want to be able to put all of your trust into the caterer, because after the contract is signed, the party is in their hands. And like it or not, everything that they do will reflect on you, for better or worse. You want to be assured that they will arrive on time, serve fresh food, and cater to the best of their ability. Set high standards – the wedding is a once-in-a-lifetime opportunity and it should be fantastic.

It's essential that when interviewing potential caterers you sit down and do a taste sampling.
This is the only true way to determine whether or not the company is as good as they say they are. If, for some reason, the Chicago catering company is unable to commit to a sample session, leave as quickly as you are able. It's most likely an indication that their culinary skills aren't up to par. And whatever you do, do not attend a sampling session alone! Bring your fiance, parents, and anyone else you can squeeze into the appointment.

Another important factor are the linens and tableware. Some Chicago catering companies will supply these reception necessities while others do not. It would be in your best interest to try to stick with a place that can take care of as many things as possible – this way you don't have to coordinate multiple external vendors. In addition to table supplies, you'll also need to consider the bar and cake-cutting service. Can the catering company run a full-service bar? If so, what types of alcohol and wine can they supply? Is there an additional corkage fee? Will they have a staff who can cut the cake and serve the guests? Does the catering company make wedding cakes?

The catering company should be properly licensed by the state, individually for both food and beverage (if applicable).

The list goes on and on. After you grill them for an hour about their skill and service, move on to licenses. A lack of an appropriate license means that the company is not operating up to code according to the health department standards. And this is not acceptable. Even if they seem like nice people and the food is great, it's not worth the risk. If they don't have liability insurance, you'd by much better off somewhere else.
